PALEO CHOCOLATE CHIP COOKIE ICE CREAM SANDWICHES

I like to think that food defines us. I like to think that our meals tell a story and reveal our characteristics and an insight into our personalities. Does the casual dinner party I have, with mix-matched plates and frayed linen napkins, say that we are easy going? Does the lobster clambake we host portray our passion for the seaside and the ocean waters? Or what about our holiday dinners that include large spreads of tapas, meats and fine wines? What is the meaning behind these dinners? Are we destined to gather around the table and share our stories with friends and families and our loved ones? Does the food we eat really impact these stories? Or does it simply mean we enjoy good food?

I like to think there is more depth. I like to think there is meaning behind the food we eat.

What about an ice cream sandwich? Is there depth and meaning there? Well, I’m not really sure, but I can tell you baking these with my children became a summer ritual. It became a story that I hope to share one day with them. And as we sat on the front porch, huddled together with melting ice cream dripping over our fingers, I felt the food defining and creating everlasting memories.

So yes, I suppose there is meaning and depth behind a simple ice cream sandwich.

Paleo Chocolate Chip Cookie Ice Cream Sandwiches | Gluten Free, Dairy Free
Ingredients
For the cookies:
1.5 cups almond flour
¼ cup coconut flour
½ teaspoon cinnamon
¼ teaspoon baking soda
¼ teaspoon baking powder
1 tsp. vanilla
pinch of salt
2 eggs
⅓ cup raw honey (or other sweetener)
¼ cup coconut oil, melted
⅓ cup Enjoy Life Mini Chocolate Chips (or other dark chocolate chips)

For the ice cream:
2 cans full fat coconut milk
¼ cup of honey
2 tsp. vanilla

Make ice cream:
1. Mix the coconut milk, honey, vanilla and a pinch of salt together.
2. Whisk well for three minutes.
3. Transfer to your ice cream machine and mix until it reaches a thick consistency.
4. Transfer to a container and keep in freezer until the cookies are baked and cooled.
*If you don't own an ice cream maker you can always buy vanilla ice cream

Make cookies:
1. Preheat oven to 350 degrees.
2. Mix the dry ingredients in a bowl: almond flour, coconut flour, cinnamon, baking soda and powder and salt.
3. In a separate bowl, mix the wet ingredients: eggs, honey, coconut oil and whisk.
4. Pour wet ingredients into dry ingredients and mix. Add the chocolate chips.
5. Line a baking sheet with parchment paper and drop tablespoon sizes of dough spaced 2 inches apart.
6. Bake cookies for 10-14 minutes. I always check at 10 minutes and then let them go another minute or two if they need.
7. Let cookies cool completely.
8. Take ice cream from freezer and add a scoop between two cookies. Place on a cookie sheet lined with parchment and keep in freezer until ready to serve.
9. Enjoy!
